  • 8 oz egg noodles (fresh or dried)
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1-inch piece ginger, grated
  • 2 green onions, sliced thinly
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Prepare all ingredients: chop vegetables into bite-sized pieces.
  2. Cook the egg noodles according to package instructions until al dente; drain and set aside.
  3. In a large skillet, heat sesame oil over medium heat. Sauté garlic and ginger for about one minute until fragrant.
  4. Add shrimp to the skillet and cook until pink and opaque (about 3-4 minutes), flipping halfway through.
  5. Add bell peppers and broccoli; stir-fry for about three minutes until vibrant.
  6. Mix soy sauce with cornstarch-water mixture; pour over the shrimp and veggies. Stir well to coat evenly.
