  • 1/4 cup almond flour
  • 2 large eggs
  • 1/2 medium onion, finely chopped
  • 1 tsp garlic powder
  • 8 oz mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup low-sodium beef broth
  • 1 tsp Dijon mustard
  • 1 tsp paprika (sweet or smoked)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine ground beef, almond flour, eggs, onion, garlic powder, salt, and pepper. Mix until just combined.
  3. Roll mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  4. Bake for 20 minutes or until golden brown.
  5. In a skillet over medium heat, sauté mushrooms in oil until golden brown (5–7 minutes).
  6. Add beef broth and heavy cream to the skillet with mushrooms; stir in Dijon mustard and paprika. Simmer until thickened (about 5 minutes). Season with salt and pepper.
  7. Once meatballs are cooked, add them to the sauce and gently stir to coat.
  8. Serve warm over zoodles or cauliflower rice.
