- 1 cup sushi rice

- 3 tbsp low-sodium soy sauce
- 1 tbsp Worcestershire sauce
- 2 tbsp ketchup
- 1 tsp mirin (optional)
Instructions
- Rinse sushi rice under cold water until clear. Combine with 1.5 cups of water in a saucepan, bring to boil, then cover and simmer on low for 18-20 minutes.
- Prepare a breading station with flour, beaten eggs, and panko breadcrumbs in separate shallow bowls.
- Dredge chicken thighs in flour, dip into eggs, then coat with panko breadcrumbs.
- Heat vegetable oil in a skillet over medium-high heat and fry chicken for about 4-5 minutes per side until golden brown.
- While frying, mix soy sauce, Worcestershire sauce, ketchup, and mirin (if using) in a bowl to create the tonkatsu sauce.
- Fluff cooked rice and divide among serving bowls. Slice fried chicken and place on top of rice; drizzle with tonkatsu sauce and garnish with green onions.
