  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 (6 oz) box stuffing mix
  • 1 cup low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese (divided)
  • 1 cup frozen peas or carrots (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Season chicken with salt, pepper, garlic powder, and onion powder.
  2. In a skillet over medium heat, cook the chicken for about 6-7 minutes per side until no longer pink. Shred or chop the cooked chicken.
  3. In a large bowl, mix shredded chicken with stuffing mix, cream of chicken soup, chicken broth, and optional veggies.
  4. Stir in half of the cheese before transferring to a greased baking dish. Spread evenly.
  5. Cover with foil and bake for 25 minutes. Remove foil, add remaining cheese on top, and bake uncovered for another 10-15 minutes until bubbly and golden brown.
