- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 (6 oz) box stuffing mix
- 1 cup low-sodium chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded cheddar cheese (divided)
- 1 cup frozen peas or carrots (optional)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Season chicken with salt, pepper, garlic powder, and onion powder.
- In a skillet over medium heat, cook the chicken for about 6-7 minutes per side until no longer pink. Shred or chop the cooked chicken.
