  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 tbsp homemade taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sliced jalapeños

Instructions

  1. Prepare your crockpot by setting it on low heat.
  2. In a skillet over medium heat, brown the ground meat until fully cooked; drain excess fat.
  3. Transfer the meat to the crockpot and add black beans, diced tomatoes, and taco seasoning; stir well.
  4. Sprinkle half of the shredded cheese on top of the mixture.
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours until heated through.
  6. Stir gently before serving; top with crushed tortilla chips, remaining cheese, sour cream, and cilantro.
