Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup fresh mozzarella cheese, shredded
  • 1/2 cup marinara sauce
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 2 large eggs
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Place each chicken breast between plastic wrap and pound to about 1/2 inch thick.
  3. In a bowl, mix the mozzarella, Parmesan, and Italian seasoning.
  4. Lay out chicken breasts, scoop some cheese mixture onto one end, and roll tightly. Secure with toothpicks if necessary.
  5. Dip each rolled pillow in beaten eggs, then coat with panko breadcrumbs.
  6. Place in the baking dish, drizzle with olive oil, and bake for 25-30 minutes until golden.
