- 6 large eggs
- 4 strips of bacon or 1 cup cooked sausage
- 1 cup shredded cheddar cheese
- ½ cup salsa (fresh or jarred)
- 1 ripe avocado or ½ cup guacamole
- 1 bell pepper, diced
- ½ onion, diced
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, cook the bacon until crispy or sauté the sausage until browned. Drain excess grease.
- Add diced onions and bell peppers to the skillet and sauté for about 5 minutes until softened.
