Ingredients

  • 4 large flour tortillas
  • 6 large eggs
  • 4 strips of bacon or 1 cup cooked sausage
  • 1 cup shredded cheddar cheese
  • ½ cup salsa (fresh or jarred)
  • 1 ripe avocado or ½ cup guacamole
  • 1 bell pepper, diced
  • ½ onion, diced
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy or sauté the sausage until browned. Drain excess grease.
  2. Add diced onions and bell peppers to the skillet and sauté for about 5 minutes until softened.
  3. In a bowl, whisk together the eggs with salt and pepper. Pour into the skillet with veggies and scramble gently until just set.
  4. Warm tortillas in a separate pan or microwave until pliable.
  5. On each tortilla, layer eggs, protein, cheese, salsa, and avocado/guacamole.
  6. Fold sides of tortillas over fillings and roll tightly from one end to secure everything inside.
  7. Slice in half if desired and serve immediately.
