Ingredients
- 1 lb lean ground beef (80/20)
- 1 cup breadcrumbs
- 2 large eggs
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- ½ cup balsamic vinegar
- ¼ cup ketchup
- 2 tbsp brown sugar
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a loaf pan.
- In a skillet over medium heat, sauté onions in olive oil until translucent; add garlic and cook briefly.
- In a large bowl, mix ground beef, breadcrumbs, eggs, sautéed onions and garlic, salt, pepper, and half of the balsamic vinegar until just combined.
- Shape the mixture into a loaf in the prepared loaf pan.
- For the glaze, whisk remaining balsamic vinegar with ketchup and brown sugar; spread half over the meatloaf.
- Bake for about 1 hour or until internal temperature reaches 160°F (70°C), brushing on remaining glaze in the last 15 minutes.
- Allow to rest for 10 minutes before slicing.
