  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 6 slices thick-cut bacon
  • 4 cups fresh romaine lettuce, chopped
  • 2 ripe tomatoes, diced
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Season chicken breasts with salt and pepper and bake on a parchment-lined baking sheet for 25–30 minutes until cooked through. Let cool slightly before chopping into bite-sized pieces.
  2. Cook the bacon in a skillet over medium heat for 8–10 minutes until crispy. Drain on paper towels and chop.
  3. In a large bowl, combine mayonnaise and lemon juice; season with salt and pepper.
  4. Add chopped chicken, crispy bacon, diced tomatoes, and lettuce to the bowl. Toss gently until all ingredients are well coated.
  5. Serve immediately or chill in the fridge for later enjoyment.
