Instructions
- Preheat the oven to 375°F (190°C). Season chicken breasts with salt and pepper and bake on a parchment-lined baking sheet for 25–30 minutes until cooked through. Let cool slightly before chopping into bite-sized pieces.
- Cook the bacon in a skillet over medium heat for 8–10 minutes until crispy. Drain on paper towels and chop.
- In a large bowl, combine mayonnaise and lemon juice; season with salt and pepper.
- Add chopped chicken, crispy bacon, diced tomatoes, and lettuce to the bowl. Toss gently until all ingredients are well coated.
- Serve immediately or chill in the fridge for later enjoyment.
