Ingredients

  • 1 cup mascarpone cheese
  • 1 cup fresh cherries, pitted and halved
  • 1 cup ladyfingers
  • 1/4 cup amaretto liqueur
  • 2 tablespoons sugar
  • 1 tablespoon unsweetened cocoa powder (for dusting)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the cherry mixture by cooking pitted cherries with sugar and half of the amaretto over medium heat until softened.
  2. In a mixing bowl, beat mascarpone cheese, remaining amaretto, sugar, and vanilla extract until smooth.
  3. Dip each ladyfinger briefly into the cherry juice mixture and layer them in your serving dish.
  4. Spread half of the mascarpone filling over the ladyfingers.
  5. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone filling.
  6. Cover and refrigerate for at least 4 hours. Before serving, dust with cocoa powder.
