Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • 2 tsp vanilla extract
  • 2 cups powdered sugar (for buttercream)
  • ½ cup softened margarine or butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a medium bowl, mix melted butter, granulated sugar, and cocoa powder until smooth.
  3. Add eggs one at a time, whisking well after each addition along with the vanilla extract.
  4. Gently fold in flour and salt until just combined; do not overmix.
  5. Stir in chocolate chips.
  6. Pour batter into the prepared tray and bake for 20-25 minutes, or until edges are firm but center is slightly soft. Allow cooling completely.
  7. For the cookie dough buttercream, beat softened margarine and powdered sugar until fluffy; mix in vanilla extract and mini chocolate chips.
  8. Cut cooled brownies into squares and spread cookie dough buttercream between two brownie squares to create sandwiches.
