  • 1 cup quinoa
  • 1 red bell pepper, chopped
  • 1 cucumber, diced
  • 2 carrots, grated
  • 3 green onions, sliced
  • ¼ cup cilantro, chopped
  • 3 tbsp lime juice (freshly squeezed)
  • 2 tbsp peanut butter (natural)
  • 2 tbsp soy sauce or tamari (low-sodium)
  • 1 tbsp sesame oil (toasted)

Instructions

  1. Rinse quinoa under cold water until clear. In a saucepan, combine quinoa with 2 cups of water and bring to a boil over medium-high heat.
  2. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Let it sit covered for an additional 5 minutes.
  3. Meanwhile, chop the red bell pepper, cucumber, carrots, green onions, and cilantro into bite-sized pieces.
  4. In a small bowl, whisk together lime juice, peanut butter, soy sauce, and sesame oil until smooth.
  5. In a large mixing bowl, combine cooked quinoa with chopped veggies and dressing. Toss gently to coat evenly.
  6. Serve immediately or chill for later enjoyment; garnish with extra cilantro if desired.
