Ingredients

  • 2 ripe avocados
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 tsp paprika
  • Salt and pepper to taste
  • Cooking oil (vegetable or olive) for frying

Instructions

  1. Slice the avocados in half and remove the pits.
  2. Set up three bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with panko breadcrumbs mixed with paprika.
  3. Coat each avocado half in flour, dip into the egg wash, then coat thoroughly with panko breadcrumbs.
  4. Heat about an inch of oil in a skillet over medium heat until it reaches 350°F (175°C).
  5. Carefully add the coated avocado halves to the hot oil and fry until golden brown, about 3-4 minutes per side.
  6. Transfer to a paper towel-lined plate to drain excess oil and serve immediately.
