- 1 cup shredded rotisserie chicken
- 1 cup canned black beans, rinsed
- 1 cup cheddar cheese, grated
- 2 jalapeños, chopped (fresh or pickled)
- 2 green onions, finely chopped
- ¼ cup fresh cilantro (optional)
- 1 tsp cumin
- 1 tsp chili powder
- Vegetable oil (for frying)
Instructions
- Preheat a skillet over medium heat. Combine shredded chicken, black beans, green onions, jalapeños, cumin, chili powder, and cilantro in the skillet. Stir until warmed through.
- Lay an egg roll wrapper on a clean surface. Place about two tablespoons of the filling in the center and fold the bottom corner tightly over it.
- Fold in both side corners toward the center and roll up tightly, sealing with water.
- Heat vegetable oil in a deep skillet to 350°F (175°C). Fry egg rolls in batches for about 3-4 minutes on each side until golden brown.
