  • 10 egg roll wrappers
  • 1 cup shredded rotisserie chicken
  • 1 cup canned black beans, rinsed
  • 1 cup cheddar cheese, grated
  • 2 jalapeños, chopped (fresh or pickled)
  • 2 green onions, finely chopped
  • ¼ cup fresh cilantro (optional)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Vegetable oil (for frying)

Instructions

  1. Preheat a skillet over medium heat. Combine shredded chicken, black beans, green onions, jalapeños, cumin, chili powder, and cilantro in the skillet. Stir until warmed through.
  2. Lay an egg roll wrapper on a clean surface. Place about two tablespoons of the filling in the center and fold the bottom corner tightly over it.
  3. Fold in both side corners toward the center and roll up tightly, sealing with water.
  4. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry egg rolls in batches for about 3-4 minutes on each side until golden brown.
  5. Drain on paper towels and serve with your favorite dipping sauce.
