  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 8 flour tortillas
  • 2 cups shredded Monterey Jack and Cheddar cheese blend
  • 1 cup sour cream
  • 1 can (4 oz) diced green chiles
  • 2 cups low-sodium chicken broth
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 2 tbsp fresh lime juice

Instructions

  1. Preheat the oven to 350°F (175°C). Boil the chicken breasts in salted water for about 20 minutes until fully cooked.
  2. Shred the chicken using two forks. Mix in minced garlic and green chiles.
  3. In a saucepan over medium heat, melt butter. Whisk in flour until smooth, then gradually add chicken broth, stirring until thickened.
  4. Stir in sour cream and lime juice until combined.
  5. Spread some sauce on the bottom of a baking dish. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
  6. Pour remaining sauce over enchiladas and sprinkle with cheese. Bake uncovered for 20-25 minutes until bubbly and golden brown.
