- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 8 flour tortillas
- 2 cups shredded Monterey Jack and Cheddar cheese blend
- 1 cup sour cream
- 1 can (4 oz) diced green chiles
- 2 cups low-sodium chicken broth
- 1/4 cup all-purpose flour
- 1/4 cup unsalted butter
- 2 tbsp fresh lime juice
Instructions
- Preheat the oven to 350°F (175°C). Boil the chicken breasts in salted water for about 20 minutes until fully cooked.
- Shred the chicken using two forks. Mix in minced garlic and green chiles.
- In a saucepan over medium heat, melt butter. Whisk in flour until smooth, then gradually add chicken broth, stirring until thickened.
- Stir in sour cream and lime juice until combined.
- Spread some sauce on the bottom of a baking dish. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
- Pour remaining sauce over enchiladas and sprinkle with cheese. Bake uncovered for 20-25 minutes until bubbly and golden brown.
