Description

  • 1 lb large fresh shrimp, peeled and deveined
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded sharp cheddar cheese
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium yellow onion, chopped
  • 1 tsp garlic powder
  • ½ cup panko breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish with olive oil.
  2. Sauté onions and bell peppers in olive oil over medium heat until softened (5-7 minutes).
  3. Add shrimp and garlic powder; cook until shrimp turns pink (3-5 minutes). Remove from heat.
  4. In a bowl, mix cream of mushroom soup with salt and pepper until smooth; combine with the shrimp mixture.
  5. Layer half the mixture in the baking dish, top with half the cheddar cheese, repeat layers.
  6. Sprinkle panko breadcrumbs on top and drizzle with olive oil.
  7. Bake for 25-30 minutes until golden brown and bubbly.
