  • 1 lb thinly sliced ribeye or sirloin steak
  • 1 medium sweet onion, thinly sliced
  • 1 large green bell pepper, diced
  • 8 oz cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup heavy cream (or half-and-half)
  • 1 cup shredded sharp cheddar cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté onions and bell peppers until softened.
  2. Stir in mushrooms and garlic; cook until mushrooms are browned.
  3. Increase heat; add steak and sear until browned (3-4 minutes).
  4. Pour in beef broth, scraping up any browned bits from the pot.
  5. Lower heat; stir in heavy cream, Italian seasoning, salt, and pepper. Simmer gently.
  6. Top with shredded cheddar cheese before serving.
