  • 2 cups fresh spinach
  • 1 cup cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Sauté sliced mushrooms until golden brown (about 5-7 minutes). Add minced garlic and cook until fragrant.
  3. Stir in fresh spinach and cook until wilted (approx. 2 minutes). Pour in heavy cream and mix well to create a creamy sauce.
  4. Gradually add grated Parmesan cheese while stirring continuously until melted. Season with salt and pepper.
  5. Combine the cooked pasta with the sauce, tossing gently to coat evenly. Heat on low for an additional minute.
