Ingredients

  • 8 oz fettuccine or penne pasta
  • 8 oz cremini mushrooms, sliced
  • 4 oz shiitake mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh basil or parsley, chopped

Instructions

  1. Gather and slice the mushrooms thinly. Mince garlic.
  2. Boil salted water and cook pasta until al dente. Drain and reserve some pasta water.
  3. Heat olive oil in a skillet over medium heat. Sauté mushrooms until golden brown (5-7 minutes).
  4. Stir in garlic until fragrant, then pour in heavy cream and mix well.
  5. Add drained pasta to the skillet, tossing gently to coat in the sauce. Stir in Parmesan cheese and adjust consistency with reserved pasta water if needed.
  6. Garnish with fresh herbs before serving.
