  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 large sweet onion, chopped
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the chopped onions until translucent (about 5 minutes).
  2. Add chicken breasts along with minced garlic, carrots, and celery; stir for an additional 5 minutes.
  3. Pour in chicken broth and add thyme; season generously with salt and pepper.
  4. Bring to a boil then reduce heat to low; simmer for 20–25 minutes until chicken is cooked through.
  5. Remove chicken from the pot and shred it using two forks before returning it to the pot with heavy cream.
  6. Let simmer on low for another 10 minutes; taste and adjust seasoning if needed before serving hot.
