  • 4 cups low-sodium chicken broth
  • 2 tsp fresh thyme (or 1 tsp dried)
  • Salt and black pepper to taste
  • 2 tbsp butter

Instructions

  4. Stir in diced potatoes, corn kernels, and chicken broth. Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  5. Gradually stir in heavy cream and heat through without boiling.
  6. Season with salt, black pepper, and thyme before serving.
