  • 8 oz fettuccine or penne pasta
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 1 cup low-sodium beef broth
  • 1 cup heavy cream (or half-and-half)
  • 1 cup freshly grated Gruyère cheese
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • ¼ cup grated Parmesan cheese

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, melt butter over medium heat. Add onions and sauté for about 20 minutes until golden brown.
  3. Stir in garlic for 1 minute, then add beef broth, scraping up any bits from the pan.
  4. Lower the heat, mix in heavy cream and thyme, and simmer for about 5 minutes.
  5. Combine drained pasta with the onion mixture, adding reserved pasta water as needed. Stir in Gruyère cheese until melted.
  6. Serve topped with grated Parmesan and a sprinkle of thyme.
