- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz cream cheese (full-fat)
- 4 cups low-sodium chicken broth
- 1 can (15 oz) black beans (rinsed)
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 2 tsp chili powder
- 1 tsp cumin
- 2 bell peppers (diced)
- Cilantro (optional, for garnish)
Instructions
- Cut the chicken breasts into bite-sized pieces.
- In a skillet over medium heat, sauté the diced onion until translucent. Add minced garlic and cook until fragrant.
- Transfer the onions and garlic to the crock pot, then add the chopped chicken, rinsed black beans, diced tomatoes (with juices), bell peppers, chicken broth, cubed cream cheese, chili powder, and cumin. Stir well.
- Set the crock pot to low heat for 6-8 hours or high heat for 3-4 hours until everything is tender.
