  • 1 lb boneless turkey breast, diced
  • 8 oz wide egg noodles
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1/2 tsp freshly cracked black pepper

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté onions, carrots, and celery until softened.
  2. Add minced garlic and cook for another 30 seconds.
  3. Increase heat slightly and add diced turkey; brown on all sides.
  4. Pour in chicken broth and water if needed; stir well.
  5. Add dried thyme, bay leaves, and pepper; bring to a boil then reduce heat.
  6. Simmer for 15–20 minutes before adding egg noodles; cook until tender but al dente.
