  • 12 store-bought potstickers
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 cups vegetable broth
  • 2 tbsp fresh ginger, grated
  • 4 green onions, sliced
  • 4 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tsp chili flakes (optional)

Instructions

  1. In a large pot over medium heat, sauté minced garlic and grated ginger for about one minute until fragrant.
  2. Add the coconut milk and vegetable broth; whisk together until smooth.
  3. Stir in soy sauce and lime juice. For added spice, sprinkle in chili flakes.
  4. Gently add potstickers to the bubbling broth and simmer for 5-7 minutes until cooked through.
