  • 4 cups low-sodium vegetable broth
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • 1 bay leaf
  • 1 tbsp lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions, carrots, and celery. Sauté for about 5-7 minutes until softened.
  2. Stir in minced garlic, thyme, and bay leaf. Cook for an additional minute until fragrant.
  3. Add the drained white beans and vegetable broth to the pot. Bring to a gentle boil while stirring occasionally.
  4. Reduce heat to low and simmer uncovered for 20-25 minutes to allow flavors to meld.
