- 1 cup long-grain basmati rice
- 2 medium onions, finely sliced
- 3 tbsp extra virgin olive oil
- 1 tsp cumin powder
- Salt and pepper to taste
- 4 cups water (for cooking lentils)
Instructions
- Rinse the brown lentils under cold water until clear.
- In a large pot, combine lentils with 4 cups of water. Bring to a boil, then reduce heat and simmer until tender (20-25 minutes).
- While lentils cook, heat olive oil in a pan over medium heat. Sauté sliced onions until golden brown (10-15 minutes), stirring frequently.
- Once lentils are tender, add rinsed rice, cumin powder, salt, and pepper to the pot with lentils. Pour in additional water according to rice package instructions.
- Bring the mixture back to a boil, cover tightly, and reduce heat. Simmer until the rice is fluffy (15-20 minutes).
- Fluff with a fork before serving hot topped with caramelized onions.
