  • 4 medium Yukon Gold potatoes, diced
  • 1 cup sharp cheddar cheese, freshly grated
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream (or milk for a lighter option)
  • 4 cups vegetable broth
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons chives, chopped
  • 1 large sweet onion, chopped
  • 2 tablespoons butter

Instructions

  1. Peel and dice the potatoes into bite-sized pieces. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, melt the butter. Add onions and sauté until translucent (about 5 minutes).
  3. Stir in minced garlic for the last minute to avoid burning.
  4. Add diced potatoes and vegetable broth to the pot; bring to a boil then reduce to simmer.
  5. Cook for 15-20 minutes until potatoes are fork-tender.
  6. Blend the soup until smooth using an immersion blender or regular blender in batches.
  7. Stir in heavy cream and cheddar cheese until melted; season with salt and pepper.
