  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
  • 4 cups low-sodium chicken broth
  • 2 tbsp Cajun seasoning (adjust to taste)
  • ¼ cup fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, bell peppers, carrots, and celery; sauté until softened (about 5 minutes).
  2. Stir in minced garlic and Cajun seasoning; cook until fragrant (about 1 minute).
  3. Add chicken breasts and diced tomatoes with juices; mix well.
