  • 4 bone-in, skin-on chicken legs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat dry the chicken legs and place them in a bowl. Drizzle with olive oil, then season with garlic powder, paprika, salt, and pepper. Toss to coat.
  3. Spread uncooked rice evenly in a baking dish and pour chicken broth over it.
  4. Arrange seasoned chicken legs on top of the rice.
  5. Cover with foil and bake for 30 minutes. Remove foil and continue baking for an additional 15-20 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
  6. Let rest for five minutes before fluffing the rice with a fork.
