- 3–4 boneless, skinless chicken breasts
- 8 oz pasta (penne or rotini recommended)
- 2 cloves fresh garlic, minced
- 2 tbsp extra virgin olive oil
- 14 oz canned diced tomatoes
- 1 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper; sauté until golden brown and cooked through (about 5 minutes per side). Remove from pan and slice.
- In the same skillet, add minced garlic; sauté for one minute. Add diced tomatoes and Italian seasoning; simmer for 5 minutes.
- Return sliced chicken to the skillet, then mix in cooked pasta and half of the mozzarella cheese. Stir well.
- Sprinkle remaining mozzarella on top; cover briefly until melted (about 3 minutes). Serve warm.
