  • 34 boneless, skinless chicken breasts
  • 8 oz pasta (penne or rotini recommended)
  • 2 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 14 oz canned diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper; sauté until golden brown and cooked through (about 5 minutes per side). Remove from pan and slice.
  3. In the same skillet, add minced garlic; sauté for one minute. Add diced tomatoes and Italian seasoning; simmer for 5 minutes.
  4. Return sliced chicken to the skillet, then mix in cooked pasta and half of the mozzarella cheese. Stir well.
  5. Sprinkle remaining mozzarella on top; cover briefly until melted (about 3 minutes). Serve warm.
