Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss sweet potato cubes with olive oil, salt, pepper, and optional paprika until well-coated.
- Spread sweet potatoes on the baking sheet and roast for 25-30 minutes until fork-tender.
- While roasting, heat a grill or grill pan over medium-high heat. Season chicken with salt and pepper; brush with BBQ sauce.
- Grill chicken for about 6-7 minutes per side, brushing with additional BBQ sauce in the last minute to caramelize.
