  • 4 slices whole wheat bread
  • 1 lb ground turkey (93% lean)
  • 1 cup bell peppers (chopped, mixed colors)
  • 2 cups fresh spinach
  • 4 large eggs
  • 1/2 cup sharp cheddar cheese (shredded)
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey, season with salt and pepper, and cook until browned, breaking it apart as needed.
  2. Once the turkey is cooked through, add chopped bell peppers and spinach to the skillet. Sauté for about 3-4 minutes until the peppers soften and spinach wilts.
  3. In a separate bowl, whisk the eggs and pour them into the skillet. Stir gently until the eggs are set but still creamy.
  4. Layer the turkey mixture on one slice of whole wheat bread, sprinkle with cheddar cheese, then top with another slice of bread.
  5. In another skillet, lightly butter both sides of the assembled sandwich and toast over medium heat until golden brown and cheese is melted.
  6. Cut each sandwich in half diagonally and serve warm or store for later.
