- 3–4 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
- 1 can (13.5 oz) full-fat coconut milk
- 3 tbsp green curry paste
- 1 cup fresh Thai basil leaves
- 1 cup bell peppers, sliced (any color)
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- Juice of 1 lime
- 2 tbsp soy sauce or fish sauce
- 1 tbsp cooking oil
Instructions
- Heat oil in a large pan over medium heat. Sauté minced garlic and ginger until fragrant (about 30 seconds).
- Add chicken pieces; cook until golden brown on all sides (approximately 5 minutes).
- Stir in green curry paste followed by coconut milk; mix well.
